Summer Salmon Pearl Couscous

Choosing a ripe pineapple and mango

To know a pineapple is ripe, the leaves will pull easily from the crown when tugged. It will also have a sweet smell. When a pineapple is heavier, that indicates that it is juicer

To know a mango is ripe when it feels slightly soft when applying pressure to it. Not firm or mushy to touch. Some will turn more red and yellow, but not all mangos.

Summer Salmon Pearl Couscous

Ingredients

– 2 salmon fillets

– Pinch of salt

– 1/2 tbsp cajun seasoning

– 1 cup couscous

– 1 1/2 cup water or vegetable broth

– 1/3 cup chopped mango

– 1/3 cup chopped pineapple

– 1 tbsp chopped red onion

– 1 tbsp minced cilantro

– 2 tbsp olive oil

– 1/2 tbsp agave

– 1 tsp ginger (optional)

– 1/2 lime (for lime juice)

Instructions

1. Pour couscous and water/vegetable broth into a small pot. Bring to a boil and add a pinch of salt. Allow to cook for 14 minutes under the couscous is tender

2. While couscous is cooking, lightly coat salmon fillets with about 1 tbsp of olive oil. Then sprinkle on a generous amount of Cajun seasoning on the top of the fillets.

3. Air-fry salmon at 400 degrees for 9 minutes

4. Wash all veggies and fruits. Then chop the mango, pineapple, and onion into small pieces. Mince cilantro.

5. In a small bowl, mix 1 tbsp olive oil, agave, ginger, and lime juice for the dressing

6. Once couscous is done, toss it in a bowl with the mango, pineapple, onion, cilantro, and dressing. Toss until mixed

7. Place couscous in a bowl and serve with salmon
