Sweet Corn Flatbread with Lime Ricotta
With corn being in season, including corn in recipes tastes like summer! This recipe includes a salty citric ricotta spread, and some freshness from onion and cilantro. I like to add a little spice using Tajin and hot honey, but this part is totally optional! This recipe is perfect for an appetizer, quick lunch, or light dinner. The vibrant summer ingredients make it an amazing meal to make with that fresh corn in your fridge!
Let’s Talk about corn
Corn is one of my favorite vegetables to cook with. It is budget-friendly, tastes delicious, and is healthy for you! Corn is easy to find and has a crisp flavor when fresh in the summer!
Corn is easy to prepare. In this recipe, I write about the quickest method, which involves microwaving the corn in a damp paper towel for about a minute. However, you can also cook it by grilling the corn, or pan frying the corn to make it charred.
Corn is in season from May- September. The perfect time for some refreshing corn in summer dishes!
How to Pick the Best Corn
Look for ears of corn where the husk is tight and a brighter green. Tassels should be brown and slightly sticky. When looking at the kernels, they should look plump and not have many spaces. This will find you a juicy ear of corn!

Modifications for Those Picky Eaters
This recipe can be modified for children or for those who are picky eaters. Some modifications that still taste good are:
- Skip Tajin
- Use regular honey for some added sweetness
- Swap cheese for a mild option such as cheddar cheese or mozzarella
- Just corn, lime juice, and cheese make a simple and yummy combination!
Sweet Corn Flatbread with Lime Ricotta

Ingredients
– 2 tbsp ricotta cheese
– 1 piece of naan bread or flatbread
– 1/2 lime for lime juice
– salt to taste
– 1 tbsp crumbled cotija or feta cheese
– chopped 1/2 tbsp cilantro
– 1/2 tbsp red onion
– tajin to taste
– drizzle of hot honey (optional)
– 1tbsp olive oil
– 1 ear of sweet corn
Instructions
1. Mix ricotta, lime juice, a pinch of salt, and 1/2 tbsp of olive oil in a small bowl
2. Take an ear of corn out of the husk, wrap in a wet paper towel, and microwave it for 1-2 minutes. Once done, cut the cooked corn kernels off the ear. It may be hot, so you may need to let it cool down before.
3. Spread the other 1/2 tbsp of olive oil on naan bread or flatbread
4. Spread ricotta evenly on the bread with a spoon or knife
5. Top with corn, cilantro, red onion, feta/cotija, and hot honey
6. Air-fry at 380 for 5 minutes. Cut into fourths and enjoy!
