Chicken Caesar Salad Sandwich

Sometimes you just want a Caesar salad, but want the crunch that comes from a ciabatta roll. This sandwich is a delicious staple, including juicy breaded chicken. This recipe includes lower-calorie options by using light Caesar dressing and panko.

Chicken Caesar Salad Sandwich

Ingredients

– 2 ciabatta rolls

– 1 chicken breast

– 1/2 cup romaine lettuce

– 1/2 cup panko

– 2 tbsp parmesan

– 1 tbsp light caesar dressing

– 1 egg

Instructions

1. Preheat oven to 400 degrees. Trim chicken breast to preference and flatten it evenly using a meat tenderizer. Slice the chicken into two equal-sized pieces.

2. In one bowl, make egg wash. To do this, crack the egg into the bowl and whisk it using a fork. Whisk until yolk is mixed with the whites. In another bowl, pour Panko. Line a baking sheet with tin foil.

3. Dip chicken into the egg wash, and flip to coat both sides of the chicken evenly. Then, immediately dip the chicken into the panko, coating it evenly. Place the chicken on a baking sheet

4. Bake chicken for 25 minutes.

5. Wash and dry romaine lettuce. Then in a medium-sized bowl, mix the lettuce, caesar dressing, and parmesan.

6. Slice ciabatta rolls in half so that there is a top and bottom half of the roll. Then toast in a toaster.

7. Assemble sandwiches by putting the chicken and sandwiches between the top and bottom halves of the toaster. Cut in half.

8. Enjoy!
