Roasted Beet Sandwiches
This healthy sandwich is one of my summer favorites. The sweetness and earthiness from the beets pairs well with the creamy goat cheese, and the freshness of the cucumber and greens. This sandwich is refreshing and perfect to serve for lunch!
Beets
There are so many health benefits of beets. Beets are full of vitamin C, folate, and more that benefit overall health. It is also an anti-inflammatory, which is beneficial for heart health and any inflammation. It is also rich in fiber which supports healthy digestion.
Beet supplements are given to professional athletes in many sports. They improve oxygen efficiency, endurance, and blood flow.
I like to roast a large batch of beets, so I have them throughout the week. They can be stored in an airtight container and heated up in the microwave for a minute.
Focaccia
To start, I am normally a sourdough lover. I make sourdough regularly with different recipes. However, I did not have as much time to prep a sourdough loaf, and felt like trying something new. So, I decided to try to make focaccia bread. I ended up loving it, as it is a simple recipe to make and full of flavor. You can make a thinner or thicker loaf. I prefer mine thinner for sandwiches, but both are tasty. If requested, I can make a blog on my focaccia bread recipe.

Beet Sandwich
Ingredients
– 1 beet
– 1/4 cup mixed greens
– 1 small cucumber
– 1 tbsp goat cheese (You can buy it with herbs, or mix in rosemary/thyme yourself into the cheese)
– Drizzle of olive oil
– Drizzle of balsamic glaze
– Salt and pepper
– focaccia bread (I prefer a thinner loaf for this sandwich, but in my video on my social media, I used a thicker loaf)
Instructions
1. Preheat oven to 400 degrees Fahrenheit
2. Wash produce. Peel the beet skin off with a peeler and dice into fourths. Place on a baking sheet and drizzle with olive oil. Then season with a sprinkle of salt and pepper. Bake for 45 minutes or until beets are tender
2. Slice the focaccia bread in half horizontally. Toast in the toaster. Slice cucumber into thin circles.
3. Once toasted, spread goat cheese on the top half. Then place beets and cucumber among the bottom half of the focaccia and top with mixed greens. Season with a pinch of salt and pepper and drizzle balsamic glaze. Assemble the sandwich by placing the top half of the focaccia on the top and cutting the whole sandwich in half. Enjoy!
