Ghostly Caprese
Caprese has always been one of my favorite appetizers or snacks. I love to find ways to make it fit into each season. The fresh tomatoes, with fresh mozzarella, basil and olive oil and balsamic will forever be a combination I can’t get tired of. Now, I thought I would add a little spooky twist to this favorite.

When to Serve
Ghost-shaped Caprese is the kind of dish that fits beautifully into so many fall occasions. It makes a playful appetizer for a Halloween party, a light side for a themed family dinner, or even a fun after-school snack that feels special without being heavy. Because it is quick to assemble and doesn’t require cooking, it’s perfect for those moments when you want something festive but low-stress. Whether you’re setting out a big party spread or just adding a seasonal touch to a weeknight meal, these little mozzarella ghosts bring charm to the table every time.
Tips and Tricks
- Shape the Mozzarella with Ease: Use a small ghost-shaped cookie cutter for a clean outline. If you don’t have one, slice mozzarella into ovals and use a knife to trim into ghostly curves by carving zig zags or waves at the bottom. It doesn’t have to be perfect to look spooky.
- Keep Basil Fresh & Perky: Basil can wilt quickly once it’s cut. To keep it vibrant, store leaves in a damp paper towel in the fridge until you’re ready to plate. Add them just before serving.
- Choose the Right Tomatoes: For slices, Roma or Campari tomatoes work best because they’re firm and not overly juicy.
- Assemble Just Before Serving
Caprese is best fresh. If you want to prep ahead, slice your ingredients in advance, but wait until just before guests arrive to put it all together. This keeps the basil crisp and the mozzarella looking neat.
For that Little Kitchen Helper
Ghost-shaped Caprese is one of those rare Halloween dishes that truly brings everyone to the table. Kids love helping place the basil leaves and assisting in layering the tomatoes with the cheese. They can even help with making spooky faces on the ghost!
Keeping it Fresh for the Party
Keeping Caprese fresh and flavorful for a gathering is easier than it seems. Start by selecting ripe, firm tomatoes and fresh mozzarella, as these ingredients hold their texture and taste even when prepared ahead of time. Store basil leaves in a damp paper towel in the fridge until you are ready to assemble, which keeps them vibrant and aromatic. Slice your tomatoes and mozzarella just before serving whenever possible, and drizzle with olive oil or balsamic glaze at the last minute to prevent the salad from becoming soggy. By taking these small steps, you can create a Caprese dish that stays bright, delicious, and visually appealing throughout your party, making it a centerpiece everyone will love.

– balsamic glaze (make sure its glaze and not oil)
– 1 tbsp olive oil
– salt and pepper
Instructions
1. Wash all produce. Slice tomatoes and mozzarella into slices.
2. Carve mozzarella into ghost on a cutting board. To do this, cut the slices into ovals. Then at the bottom, carve little waves or zigzags to look like a ghost. It does not have to be perfect.
3. Lay the slices of tomatoes on the plate. Drizzle olive oil on them and season with salt and pepper to taste
4. Lay the basil on the tomatoes. Then stack the ghost on top of the basil
5. Using balsamic glaze, make faces on the ghost – two eyes and a mouth. I just do three simple circles for this part.
6. Serve and enjoy!
