Chicken Mexican Pizza
How to Make a Crispy Chicken Mexican Pizza Without Deep Frying
If you love Taco Bell’s Mexican Pizza but want something lighter (and even tastier), this baked version is your new go-to. It’s still crispy, cheesy, and full of that saucy Tex-Mex flavor, just without the deep fryer. You’ll get that perfect crunch using simple oven, and bonus: fewer dishes, less oil, and a cozier kitchen.
Why Chicken is the Perfect Protein for Comfort Food Recipes
Chicken is the perfect protein for comfort food because it strikes that ideal balance between cozy and nourishing. It’s lean, high in protein, and gentle on digestion, making it a satisfying base for creamy, cheesy, or saucy dishes without feeling heavy. Its mild flavor absorbs spices and sauces beautifully, whether you’re making a baked Mexican pizza, a creamy soup, or a cozy casserole, and it keeps you full while adding wholesome balance to indulgent recipes. Chicken proves that comfort food can still be light, nourishing, and full of flavor.
How to Lighten Up Your Favorite Fast Food Meals Without Losing Flavor
Lightening up your favorite fast food meals doesn’t mean giving up the flavors you crave, it’s all about smart swaps and cozy creativity. Start by baking or air-frying instead of deep-frying to cut back on oil without losing crunch. Use lean proteins like chicken or turkey, swap in whole-grain or low-carb tortillas and buns, and build flavor with spices, sauces, and fresh toppings instead of extra cheese or heavy dressings. With a few thoughtful tweaks, you can recreate your go-to drive-thru favorites at home in a way that’s lighter, fresher, and still full of comfort.
Chicken Mexican Pizza
Ingredients
– 4 tortillas
– 1 can refried beans
– 1 package of ground chicken
– 1/2 package taco seasoning
– Enchilada sauce
– a handful of cheese
– avocado
– chipotle sauce (for drizzling)
– 1 tomato
– 1/4 cup cut cilantro
Instructions
- Preheat your oven to 425°F and line a baking sheet with parchment paper.
-
In a skillet over medium heat, cook the ground chicken with seasoning until fully browned. Stir in the taco seasoning and a splash of water; simmer for 2–3 minutes to absorb the flavor.
-
Crisp the Tortillas: Lightly brush each tortilla with olive oil and bake for 4–5 minutes per side, or until golden and crispy.
-
Layer It Up: Spread refried beans on two of the tortillas, then top each with the chicken. Place the remaining tortillas on top to create two “pizzas.”
-
Add Sauce & Cheese: Spoon enchilada sauce over the top layer and sprinkle with cheese.
-
Bake Again: Return to the oven for another 5–7 minutes, until the cheese is melted and bubbly.
-
Top It Off: Add diced tomato, avocado, chopped cilantro, and a drizzle of chipotle sauce. Slice and serve warm.
