Cashew Pesto
A creamy pesto with a hint of lemony citrus

Ingredients
– 2 cups tightly packed basil
– 1/2 cup cashews
– 2 peeled garlic cloves
– 3/4 cup grated parmesan
– 1/2 large lemon
– 1/2 cup olive oil
– pinch of pepper
Instructions
1. Add basil, cashews, peeled garlic, parmesan, olive oil and pepper into the food processor
2. Squeeze out the lemon juice of half a lemon and also add to processor
3. Blend on high until creamy
4. Transfer into bowl or container to store
