2 medium apples (such as Honeycrisp or Granny Smith), peeled and diced
2 tbsp butter
3 tbsp brown sugar
1 tsp cinnamon
¼ tsp nutmeg (optional)
1 tsp cornstarch
1 tsp lemon juice
Pinch of salt
1 sheet premade puff pastry (thawed according to package directions)
1 egg (for egg wash)
1 tbsp water

½ cup powdered sugar
1–2 tsp milk

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Remove from heat and let cool slightly.
In a small skillet over medium heat, melt butter. Add diced apples, brown sugar, cinnamon, nutmeg, and salt. Cook 5–6 minutes, until apples begin to soften.
Stir in cornstarch and lemon juice; cook 1–2 minutes until thickened.
Roll out the puff pastry sheet lightly on a floured surface.
Cut into 8 equal squares (about 4×4 inches each)
Spoon about 1-2 tablespoon of apple filling onto the center of each square.
Fold diagonally to form a triangle and press edges with a fork to seal.
Beat the egg with 1 tablespoon water for an egg wash. Brush over turnovers
Sprinkle with coarse sugar (optional).
Bake 20–25 minutes, until golden brown and puffed.
