Autumn Apple Grilled Cheese

Ingredients

– 2 slices of sourdough

– 1/2 apple cut into thin slices

– 1 tbsp lite mayo

– 1 tbsp butter

– 1/4 cup spinach (washed)

– about 4 slices of cheese (I like cheddar, Gruyère,  or white cheddar; shredded or slices)

Instructions

  • Spread mayonnaise on one side of each slice of sourdough bread.

  • Heat a skillet over medium heat and melt the butter.

  • Place one slice of bread, mayo side up, in the skillet.

  • Layer the cheese evenly on the bread, then add the thin apple slices and spinach on top.

  • Place the second slice of bread on top, mayo side down.

  • Cook until the bottom slice is golden brown, about 3–4 minutes, then carefully flip the sandwich.

  • Cook the other side until golden and the cheese is melted, another 3–4 minutes.

 

  • Remove from the skillet, let cool slightly, then slice and serve warm.
