– 2 slices of sourdough
– 1/2 apple cut into thin slices
– 1 tbsp lite mayo
– 1 tbsp butter
– 1/4 cup spinach (washed)
– about 4 slices of cheese (I like cheddar, Gruyère, or white cheddar; shredded or slices)
Spread mayonnaise on one side of each slice of sourdough bread.
Heat a skillet over medium heat and melt the butter.
Place one slice of bread, mayo side up, in the skillet.
Layer the cheese evenly on the bread, then add the thin apple slices and spinach on top.
Place the second slice of bread on top, mayo side down.
Cook until the bottom slice is golden brown, about 3–4 minutes, then carefully flip the sandwich.
Cook the other side until golden and the cheese is melted, another 3–4 minutes.
Remove from the skillet, let cool slightly, then slice and serve warm.
