In a medium bowl, combine 1 cup cooked chicken, ¼ cup diced celery, ¼ cup diced apple, 2 tbsp dried cranberries, and 2 tbsp finely diced red onion.
Add 3 tbsp lite mayonnaise (or a mixture of half mayo and half Greek yogurt), ½ tbsp Dijon mustard, ½ tbsp parsley, and 1 tsp apple cider vinegar (or lemon juice).
Season with salt and pepper to taste.

Toast 4 slices of hearty bread (sourdough, multigrain, or croissant rolls) if desired for extra crunch and flavor.
