– 1 tomato

In a skillet over medium heat, cook the ground chicken with seasoning until fully browned. Stir in the taco seasoning and a splash of water; simmer for 2–3 minutes to absorb the flavor.
Crisp the Tortillas: Lightly brush each tortilla with olive oil and bake for 4–5 minutes per side, or until golden and crispy.
Layer It Up: Spread refried beans on two of the tortillas, then top each with the chicken. Place the remaining tortillas on top to create two “pizzas.”
Add Sauce & Cheese: Spoon enchilada sauce over the top layer and sprinkle with cheese.
Bake Again: Return to the oven for another 5–7 minutes, until the cheese is melted and bubbly.
Top It Off: Add diced tomato, avocado, chopped cilantro, and a drizzle of chipotle sauce. Slice and serve warm.
