Chicken Mexican Pizza

Ingredients

– 4 tortillas

– 1 can refried beans

– 1 package of ground chicken

– 1/2 package taco seasoning

– Enchilada sauce

– a handful of cheese

– avocado

– chipotle sauce (for drizzling)

– 1 tomato

– 1/4 cup cut cilantro

Instructions

  1.  Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, cook the ground chicken with seasoning until fully browned. Stir in the taco seasoning and a splash of water; simmer for 2–3 minutes to absorb the flavor.

  3. Crisp the Tortillas: Lightly brush each tortilla with olive oil and bake for 4–5 minutes per side, or until golden and crispy.

  4. Layer It Up: Spread refried beans on two of the tortillas, then top each with the chicken. Place the remaining tortillas on top to create two “pizzas.”

  5. Add Sauce & Cheese: Spoon enchilada sauce over the top layer and sprinkle with cheese.

  6. Bake Again: Return to the oven for another 5–7 minutes, until the cheese is melted and bubbly.

  7. Top It Off: Add diced tomato, avocado, chopped cilantro, and a drizzle of chipotle sauce. Slice and serve warm.
