2 cups all-purpose flour
2 tbsp granulated sugar
1 tbsp baking powder
1/2 tsp salt
2 large eggs
1 3/4 cups milk (whole or 2%)
1/3 cup melted butter
2 tsp vanilla extract
1 cup mini chocolate chips
Preheat your waffle iron according to manufacturer instructions.
Mix dry ingredients:
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Mix wet ingredients:
In a separate bowl, whisk together the eggs, milk, oil (or melted butter), and vanilla extract.
Combine:
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Don’t overmix, a few small lumps are okay.
Add chocolate chips:
Fold in the mini chocolate chips.
Cook:
Spray the waffle iron with nonstick spray. Pour batter (about 1/2–3/4 cup, depending on your iron) and cook until golden and crisp. My iron was a mini heart shape so I only did about 1-2tbsp, this would make more waffles since it is mini.
Serve warm:
Top with whipped cream, maple syrup, extra chocolate chips, fresh berries, or powdered sugar!
