Maple Glazed Brussels Sprouts

Ingredients

– 1 pound brussels sprouts (washed, trimmed and cut in halves)

– 2 tbsp olive oil

– 3/4 tsp salt

– 3/4 tsp pepper

– 2 tbsp maple syrup

– 2 tbsp balsamic vinegar

– 1/4 cup dried cranberries

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

  2. In a small bowl, mix the olive oil, balsamic vinegar, maple syrup, salt and pepper
  3.  In a large bowl, toss the halved Brussels sprouts with mixture until evenly coated.

  4. Spread the sprouts in a single layer on the baking sheet. Roast for about 25-30 minutes, stirring halfway through, until the edges are golden and crisp.

  5. Add cranberries: Remove from the oven and stir in the dried cranberries 2 minutes after being removed from oven
