1 box (15.25 oz) strawberry cake mix
2 large eggs
1/3 cup unsalted butter, melted
1/4 cup granulated sugar (for rolling)
1/4 cup pink sprinkles (optional, for rolling)
24–30 strawberry or milk chocolate kisses, unwrapped
Preheat oven to 350°F. Line a baking sheet with parchment paper.
In a large bowl, mix together the strawberry cake mix, eggs, and melted butter until fully combined. The dough will be thick and slightly sticky.
Scoop about 1 tablespoon of dough and roll into balls. Roll each ball in granulated sugar or pink sprinkles (you can alternate for both).
Place on prepared baking sheet about 2 inches apart.
Bake for 8–10 minutes, until the edges are set. The centers will look slightly soft — that’s perfect.
Remove from oven and immediately press one unwrapped kiss into the center of each cookie.
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. The chocolate will soften but will set again as they cool.
