– 1/2 cup flour
1. In a large pot over medium heat, melt butter. Add diced onion and cook for 4-5 minutes until soft and translucent
2. Add minced garlic and cook for 30-60 seconds until fragrant. Season with a sprinkle of salt and pepper.
3. Make the roux by sprinkling flour over the onion mixture. Stir constantly for 1-2 minutes until flour is lightly cooked. You want it golden, but not brown.
4. Pour in vegetable broth and milk. Stir and bring to gentle simmer.
5. Add chopped broccoli and shredded carrots. Simmer for 10-12 minutes, until broccoli is tender.
6. Reduce heat to low. Gradually stir in shredded cheddar until melted and smooth
7. Serve and enjoy!
