The Great Pumpkin Hummus

Ingredients

  • 1 ½ cups pumpkin puree (canned)

  • 1 can (15 oz) chickpeas, drained & rinsed

  • 2–3 Tbsp tahini

  • 2 Tbsp olive oil (plus extra for drizzling)

  • 2 Tbsp lemon juice

  • 1 clove garlic, minced (or roasted for milder flavor)

  • 1 tsp ground cumin

  • ½ tsp smoked paprika (plus extra for garnish)

  • ½ tsp salt (to taste)

  • 2–4 Tbsp water (as needed for texture)

  • 1 tsp dried parsley for garnish

Instructions

  1. In a food processor, combine pumpkin, chickpeas, tahini, olive oil, lemon juice, garlic, cumin, paprika, and salt. Blend until smooth, adding water 1 Tbsp at a time to reach creamy consistency.

  2. Transfer to a bowl, drizzle with olive oil, and sprinkle with smoked paprika or dried parsley.
