This simple wrap is a great way to start the day! Offering protein, nutrients, and energy, this wrap will become a regular when planning out meals. It takes about 10 minutes to make and taste delicious!
Sides with wrap
Often, I like to think if there is anything else I can add to my breakfast to give me a strong start for the day. My favorite side to any breakfast is a cup of mixed fruit. This adds fiber which aids in digestion and has many health benefits. Another side I enjoy is some yogurt, for some probiotics.

Feta!
Feta is one of my favorite cheeses to cook breakfast with. It has a salty, rich, tangy flavor that complements eggs very well. Feta eggs became popular on social media in the past few years. Since I tried it, I became obsessed with including it with my eggs.
Ways to add more protein
Sometimes you may want to have more protein in your wrap. Especially if you are working out or your body is recovering. One way to add more protein is to add an egg. This will not change the flavor of the wrap. If you are not wanting to add any meat, having a side of greek yogurt is a great option to add protein. I like the vanilla-flavored greek yogurts mixed with some strawberries. Turkey bacon or chicken sausage are also great options to add lean protein to this wrap.

Veggie Egg Wrap
Ingredients
- tortilla
- 1 tbsp pesto
- 1 tbsp olive oil
- 1 large egg
- 4 mushrooms
- 4 cherry tomatoes
- handful of spinach
- 1/4 cup feta (I like Trader Joe’s feta with Mediterranean herbs)
- 1/4 tsp (or to taste of your liking) of Trader Joe’s 21 seasoning salute
Instructions
1. Wash all veggies and dry spinach with paper towels. If veggies are still wet, the wrap will get soggy
2. Turn the heat on the stove to medium heat. Warm the pan for one minute
4. Warm the tortilla on the pan for one minute. After, flip the tortilla and warm for one more minute. Then take the tortilla off the stove and place it onto the plate
5. While the tortilla is warming, dice the mushrooms into small pieces and the tomatoes into fourths
6. Warm olive oil in the pan. Once warm, add the mushrooms and allow them to cook until they are tender.
7. Smear pesto onto the warm tortilla
8. Add spinach to the pan and cook until the spinach shrinks and wilts.
9. Add feta cheese and egg to the pan. Take a spatula and scramble all the ingredients in the pan together to make a scramble. Cook until eggs are firm.
10. Assemble the wrap by scooping the scramble onto the tortilla in a line. Fold into a wrap by pinching the ends inwards while rolling the tortilla.
11. Enjoy!
